I like ribs.  To taste the best, Tina and I once drove to Kansas City to order up a rack of Arthur Bryant's best.  Our visit to Arthur Bryant's was spurred by a description that Calvin Trillin wrote in Alice Let's Eat (out of print).  We were not disappointed.  We had also eaten at Everett & Jones in Berkeley, CA., and numerous rib joints in Los Angeles.  Additionally, we have a couple decades experience smokin' our own.  I relate this to express the fact that we are experienced rib aficionados.

Dinosaur Bar-B-Que rates comparison with the best.  The quality of their ribs is excellent.  The smokey flavor is just right.  The quality of the meat is as good as it gets.  Each time I have ordered their ribs they were cooked just right.  Where they fall short is the sauce.  In an apparent attempt to satisfy everyone, the ribs are delivered to the table dry.  It is up to the customer to pour cold BBQ sauce, from a choice of several, over their ribs.  This just doesn't work.  What they should do is ask customers if they want wet or dry ribs.  If a customer asks for wet, they should have the option of hot, medium, or mild sauce.  What I usually do is eat the ribs without sauce.  They are good enough to eat plain.  However, the table sauces are pretty good.  Perhaps if they served the sauce hot it would be a step in the right direction.  Side dishes are generally good to excellent.  However, their chili requires a hefty dose of hot chili sauce to perk it up. 

Dinosaur Bar-B-Que is good enough to satisfy serious fans of ribs, but bland enough not to challenge the delicate palates of Rochester taste buds.

The decor is manufactured funky, but done well.  The service is polite and reasonably fast.  Take out is available.  Lunch times are always crowded plan to come early and get back to work late.
